It keeps lactases, heat-sensitive vitamins and beneficial bacteria intact: milk carries the tools to digest itself. It is the same food we have drunk for eight thousand years.

reshly milked milk is a living food: it brings its own enzymes, lactic bacteria that ferment it on its own and intact fat-soluble vitamins. Heating it to 72 °C for fifteen seconds makes it shelf-stable for weeks, and switches off almost everything that made it milk instead of a white liquid.
Homogenization goes one step further: it pressure-breaks the fat globules so the cream never rises again. It is convenient for the industry, which is why supermarket milk never clots: a physical change raw milk does not need, because its cream rises on its own within a day.
Pasteurization was a reasonable answer to a real problem: enormous cities, cows crowded without seeing the sun, dirty milking and not a gram of cold between the barn and the front door. In that context, heating milk saved lives.
Sales vary widely from country to country: in some you buy it in shops, in others only at the farm itself, through herd shares or vending machines on the property. That is why this map does not talk about "milk" in the abstract: it talks about specific farmers, with a name and a schedule, whom you can visit milking before buying anything.
