Pasteurization works. Heat milk to the right temperature for the right time and you kill the pathogens that once made urban dairies deadly. No serious account of raw milk should pretend otherwise. The honest debate begins after that point.

What heat takes with it

The same heat that kills Listeria also denatures the enzyme lactase, deactivates many of the milk's native proteins, and kills the lactobacilli that, in raw milk, actively crowd out pathogens. Pasteurization is not a scalpel. It is a fire, and a fire does not distinguish between what you fear and what you value.

The GABRIELA study

The GABRIELA study (2011) is the most cited observational study on raw milk and health. It found that children who drank raw milk had 41% lower asthma risk and 49% lower hay fever risk. The protective mechanism was traced to whey proteins, BSA, α-lactalbumin, β-lactoglobulin, that denature with heat. The protection came from the proteins, not the bacteria.

The numbers, in context

Between 1998 and 2018 the FDA recorded 202 outbreaks linked to raw milk. That is a real number and it deserves respect. It is also a number without a denominator in most retellings, unmoored from how the milk was produced, from whom, under what standard of cleanliness. A clean herd-share in a regulated dairy is not the statistical twin of milk from an unknown bulk tank.

In 2023–2024, 171 cases of Salmonella were linked to commercially distributed raw milk in California (CDC). This is not an argument against raw milk from a verified, clean herd, it is an argument for knowing your source.

The right question is never "is raw milk safe?" It is "is this raw milk, from this dairy, worth it?"

The kefir compromise

Ferment raw milk into kefir and the live cultures multiply while the acidifying environment suppresses the very pathogens people fear. You keep most of what raw milk offers and discard much of the risk.

Consider the one milk no one proposes to pasteurize: the milk a mother makes. It is raw. It carries bacteria. Its enzymes are active by design. We do not heat it because we understand, in that single case, that the living parts are the point. Raw cow's milk asks us to take the same understanding and extend it: carefully, and only as far as the sourcing earns.
