Spain, farm by farm

Spain has verified primal food sources across 17 autonomous communities. Direct farm sale of raw milk is legal under Real Decreto 1086/2020, one of the most permissive frameworks in southern Europe. Grass-fed beef from breeds like Rubia Gallega, Asturiana de los Valles and Retinta remains a living tradition in Galicia, Asturias and Extremadura. Why Spain grows the food it grows

Spain enters the atlas through three doors at once: local markets, raw honey, wild seafood. That is not a registration accident — it is the country's structure. Where there is grassland there is livestock; where there is a coast, an auction hall; where there is a market tradition, a stall. The 834 localities holding at least one listing draw the real map of unprocessed food, and this terrain explains why it clusters where it clusters.

Each category weighs what its production network weighs. Grass-fed meat needs acreage; raw milk needs a registered herd and a short cold chain; cheese needs aging; markets need producers nearby. That is why the atlas is never uniform: geography leads and the numbers follow. What you see in the bars on the right is literally the country counted by source type.

And the usual honesty: if pasture eggs looks thin, it is not missing from Spain — it is missing from the atlas. The map grows listing by listing, and every verified source raises the floor for the next one.

What the law says about raw milk in Spain

Permitted

Permitted

Direct sale to the consumer is a legal channel. Where it applies, the farm is the shop.

—Farm-gate or vending-machine sale with a registered herd—Official hygiene package (EU 852/853 or local equivalent)—Herd free of brucellosis and tuberculosis, tested—Label warns the milk is raw and unpasteurized
Depends on the regionHow it works here

Depends on the region

The same country can hold three regimes at once: legal at the farm, restricted in retail, banned in some regions.

—Farm-gate sale usually legal; retail often not—Aged raw-milk cheese (60+ days) widely legal as a backdoor—Herdshares or clubs where direct sale is closed—Rules change by state, lander, region or county
Prohibited in retail

Prohibited in retail

No legal commercial channel for liquid raw milk. The workarounds are ownership or the border.

—Retail sale of raw drinking milk is banned—Own-animal consumption (herdshare) stays in a grey zone—Aged raw-milk cheese remains available and legal—Some buyers cross into a neighbouring country

How it works here — Farm-gate only, and the farm must be authorised

✦Direct sale at the farm is legal under the 2020 royal-decree update (previously RD 640/2006); retail sale of raw drinking milk remains banned✦The farm needs a sanitary registry (RGSEAA) and a specific raw-milk authorisation; the herd must be brucellosis- and TB-free✦Milk must be sold within 72 hours of milking, kept at 1–4 °C; the label must state 'raw milk, boil before consumption'✦Aged raw-milk cheese (60+ days) is fully legal in retail: Spain's default raw dairy route

This card set is orientation, not legal advice: raw-milk rules move by region and by year. When in doubt, ask the producer for their registry number.
